If you’re looking for an easy brunch recipe that requires zero kitchen expertise (or close to it), look no further. Just throw some meat in your crock pot the night before, and wake up to cook about 15 minutes before you plan on eating.
Ingredients:
- Meat
- Slab of Corned Beef Brisket (raw slabs available in grocery stores and come with necessary seasoning; we bought ours at Walmart)
- 1 cup Water
- Biscuits
- 2 1/4 cups Bisquick®
- 2/3 cup Milk (Bisquick Recipe)
- OR save yourself a bowl washing and buy pre-made biscuits. We won’t judge you.
- Extras
- Swiss Cheese Slices (1 per sandwich)
- Peach Jelly (Or whatever flavor of jelly/jam floats your boat. Do you, boo.)
Directions:
- The night before your meal, place the beef brisket in crock pot (fatty side up), and add seasoning to top of meat.
- Add cup of water to crock pot (water should come right below top of the meat).
- Cook on high for 12 hours (or 24 hours on low if you’re really prepared); if not ready to serve after 12 hours, turn temperature to low.
- The sun has risen, and you’re now ready to eat. Time to cook biscuits! If using Bisquick, mix ingredients, place spoonful of batter on cookie tray, and bake for 8-10 minutes (See Recipe). If using pre-made biscuits, follow instructions on can.
- While biscuits are finishing up, take the meat out of the crock pot and cut slices against the grain.
- Remove biscuits from oven when golden brown and cut in half.
- Place meat and a Swiss cheese slice on biscuit.
- Slather some jelly on top half of biscuit, and serve.
- Enjoy, and save any leftover corned beef for some delicious, mid-afternoon Reubens.
